SPICE ROASTED CAULIFLOWER

This cauliflower recipe is so simple it’s barely a recipe. With equal parts of almost every ingredient, it’s the perfect dish to throw together at a moment’s notice. This dish is traditionally deep-fried or sautéed, but I prefer the crispy, charred exterior that roasting provides.

Ingredients

  • 1 large cauliflower head 
  • 1 teaspoon chilli powder
  • 1 teaspoon finely grated ginger
  • 1 teaspoon turmeric 
  • 1 teaspoon cumin seeds 
  • 1/2 teaspoon garam masala 
  • salt to taste 
  • 2 tablespoons oil 

Instructions

  1. Set oven to 400 degrees. Mix together oil, cumin seeds, ginger, chili powder, turmeric, and 1 tsp of salt (or to taste).
  2. Cut cauliflower into small florets and mix into the marinade.
  3. Spread cauliflower in an even layer on a cast-iron skillet or sheet pan.
  4. Roast for 30 minutes or until browned to your liking. Remove halfway to sprinkle Garam masala and flip.
  5. Sprinkle with salt to taste and serve warm.
