CALABRIAN CHILI MUSSELS

This is my favorite meal to make for friends because it looks and feels impressive but is so so easy to make. Serve with some extra crusty bread and a crisp glass of white wine (you have to open the bottle anyways!)

RECIPE

  1. Rinse the mussels in cold water until the water runs clear. Discard any that are not fully closed, even after tapping gently.

  2. In a large pot, heat 1/2 tbsp olive oil and 1 tbsp butter over medium-high heat.

  3. Add the shallots and cook, stirring frequently, until soft and fragrant (about 3-4 minutes).

4. Add 1 tbsp calabrian chilli paste, garlic and a pinch of salt. Stir and cook for another 1 minute. Adjust the heat as needed to prevent the garlic from burning. 

5. Add the mussels, ½ cup chicken broth, and ⅓ cup white wine. Mix and cover for 4-5 minutes, until all the mussels open up.

6. Transfer the mussels to a bowl, keeping the broth in the pot. Taste and adjust for salt. 

7. Pour the broth over the mussels and serve immediately with some crusty bread!


NOTES

Note 1: 1 tbsp creates a fairly spicy end result. The spice level of Calabrian Chilli Paste can vary greatly depending on the brand. Taste before adding and adjust as needed!
