
SPICY GARLICKY GREEN BEANS
Spicy, Garlicky Green Beans with a ton of crunchy fried peanuts. A very quick recipe that tastes better than takeout!!

Spicy Stir-Fried Green Beans w/ Fried Peanuts

Ingredients
- 1/2 cup peanuts, roughly chopped
- 1/2 pound green beans, trimmed and sliced into ¼" rounds
- 1-3 Thai chilies, thinly sliced
- 2 medium shallots, finely diced
- 5 garlic cloves, finely chopped
- 1/4 cup roughly chopped cilantro
- Juice of 1 lime
- 3 tbsp neutral oil (I prefer coconut oil)
- Salt to taste
Instructions
- Heat 2 tbsp of oil in a heavy-bottomed pot or skillet over slightly higher than medium heat. Add the sliced chilies - they should immediately begin to sizzle. If they don’t, turn up the heat slightly, then the roughly chopped peanuts.
- Fry, stirring constantly, until the peanuts begin to turn dark and golden brown, about 3 minutes. (The oil may become slightly murky due to the peanut dust, but don’t worry – this is normal!)
- Add the diced shallots and 1/2 tsp of salt. Stir well to combine, then remove the pan from the heat. Transfer the peanut and shallot mixture to a plate and set aside.
- In the same pan, heat the remaining 1 tbsp of oil over medium-high heat. Add the sliced green beans and fry for 6-8 minutes, allowing the beans to char and pick up some color. Let them sit undisturbed for 1-2 minutes in between stirring to get a nice char. If the pan starts to smoke too much, reduce the heat.
- Once the green beans are cooked through and nicely browned, add the chopped garlic. Stir to combine and cook for another 30 seconds.
- Turn off the heat, then add the reserved peanut and shallot mixture and chopped cilantro to the pan. Mix everything well.
- Squeeze in the juice of half a lime, mix again, and serve hot. Garnish with the remaining lime juice.
