SPICY GARLICKY GREEN BEANS

Spicy, Garlicky Green Beans with a ton of crunchy fried peanuts. A very quick recipe that tastes better than takeout!!

Ingredients

  • 1/2 cup peanuts, roughly chopped
  • 1/2 pound green beans, trimmed and sliced into ¼" rounds
  • 1-3 Thai chilies, thinly sliced
  • 2 medium shallots, finely diced
  • 5 garlic cloves, finely chopped
  • 1/4 cup roughly chopped cilantro
  • Juice of 1 lime
  • 3 tbsp neutral oil (I prefer coconut oil)
  • Salt to taste

Instructions

  1. Heat 2 tbsp of oil in a heavy-bottomed pot or skillet over slightly higher than medium heat. Add the sliced chilies - they should immediately begin to sizzle. If they don’t, turn up the heat slightly, then the roughly chopped peanuts.
  2. Fry, stirring constantly, until the peanuts begin to turn dark and golden brown, about 3 minutes. (The oil may become slightly murky due to the peanut dust, but don’t worry – this is normal!)
  3. Add the diced shallots and 1/2 tsp of salt. Stir well to combine, then remove the pan from the heat. Transfer the peanut and shallot mixture to a plate and set aside.
  4. In the same pan, heat the remaining 1 tbsp of oil over medium-high heat. Add the sliced green beans and fry for 6-8 minutes, allowing the beans to char and pick up some color. Let them sit undisturbed for 1-2 minutes in between stirring to get a nice char. If the pan starts to smoke too much, reduce the heat.
  5. Once the green beans are cooked through and nicely browned, add the chopped garlic. Stir to combine and cook for another 30 seconds.
  6. Turn off the heat, then add the reserved peanut and shallot mixture and chopped cilantro to the pan. Mix everything well.
  7. Squeeze in the juice of half a lime, mix again, and serve hot. Garnish with the remaining lime juice.
